Happy Hour: Carrot Cocktails

Tomorrow, I am taking the day off.  I am so deep in the burnout, I don’t think a single day will fix it, but at least I can take care of some chores and snuggle my dogs before we enter the end-of-session gauntlet.  So we’re doing the happy hour post a day early.

One of my New Year resolutions was to eat more vegetables.  This can be difficult in Helena, where most salads are either iceberg lettuce with ranch or covered in so many dried and candied things.  But I don’t think there’s any rule that says drinking my vegetables doesn’t count.

I present carrot cocktails.  Perfect for Easter and pretending you’re making healthy choices.

How adorable is this serving suggestion that I found on Pinterest?  A table of these parsley garnished carrot mimosas would be really cute at a family brunch.

Prefer a carrot martini?  Sunset magazine has a fun recipe.  I would add a splash of ginger-infused simple syrup for a spicier flavor profile, but to each her own.

Looking for skip the veggies and move straight to the Easter Candy side of the equation?  Bite the ears of a chocolate Easter Bunny and use the hollow shell to serve these cute Easter cocktails.  (Pro tip: Chill the bunnies thoroughly or they will melt in your hand.)

As for what to wear on Easter…I’m always a proponent for white.

This incredible eyelet dress from Lost + Wander has lovely details, a flowy, forgiving shape and a decent mid-tier price.  I adore the scallop trim.

This Maeve Harper tunic from Anthro is also lovely (also in plus).  This Draper James dress has a very prim, feminine look.  This maxi dress from Veronica Beard would be a nice choice for a relaxed backyard wedding.

But I think my favorite casual option is this shirtdress from J.Crew Mercantile.  Which runs to plus-sizes, and comes in other colors if white is not on your fashion menu.

Have a Blessed Easter if you celebrate.  If you do not, enjoy the candy and brunch.
