As I mentioned on Instagram last week, I’m moderating my consumption of alcohol right now. It’s a tumultuous time, and it’s too easy to treat a nightly cocktail or two like a routine needed to wind down at the end of a stressful day. So today, I thought I would post one of my favorite breakfast recipes.
Saturday morning breakfast/brunch is one of my favorite things. That’s why I have an entire Pinterest board dedicated to breakfast foods and baked breads. And this croissant French toast bake from Half Baked Harvest is worth your time.
If you’re expecting company or just want to spruce up your weekend mornings, you can make this entire dish in advance and just put it in the oven when you’re ready. The ingredients list and process are uncomplicated, so even kids could make it.
I used 3/4 of the amount of fruit preserves the recipe called for and very little powdered sugar because I didn’t want it to be too sweet. So feel free to play with the recipe a bit.
You can also adapt the recipe into a quiche like dish. I was going to make this one weekend, but our house guests didn’t like sweets. I already had the day-old croissants, so I mixed up a quick bacon-quiche egg mixture and poured it all over them. This recipe from the Candid Appetite is similar.
