Yesterday, we had a Zoom happy hour with some congressional staff alumni and it was really fun to see everyone again. Because I’m on the West Coast, I still had a couple of hours left in my workday, so I could dive into Happy Hour with as much abandon as I would have liked. But I have big plans for my grad school happy hour tomorrow.
Meet the Kentucky Lemonade. Bourbon, lemonade, ginger ale; what could go wrong?
The trick is to avoid making the cocktail too sweet. The Simply Lemonade brand makes a low-sugar version, which works well for this application. I also recommend a zippier ginger ale (like Reed’s) or a ginger beer.
This is one of those cocktails that you need to “season to taste,” so as you make it, adjust the sweetness or ginger flavor to your preference. The mint is optional, but highly recommended.

2 Oz vodka
2 Oz Pom Juice
4 Oz Simply Lemonade
Serve in a tall glass over ice. It’s wonderfully refreshing.
